A Modern Rose: Oat Cookies

This weeks recipe is delicious and chewy oat cookies.

I actually don’t have much of a sweet tooth, so these oat cookies are one of the few treats that I love. I make mine with golden syrup that can often be found in larger supermarkets (easily found at the Edeka) but I have also made these with golden honey instead. Both give a real sticky and gooey feel to the cookies that are incredibly moreish!

I add chocolate chips and sultanas but a mixed bag of dried fruit and nuts also work well. They can be stored in an airtight container for up to five days and are a perfect mid-morning snack!


Ingredients:

150g butter (room temperature)

200g brown sugar

75g caster sugar

2 medium free range eggs

2 tspn vanilla extract (or essence will do)

1 tbpsn baking powder

150g flour

200g porridge oats

175 chocolate chips

100g sultanas

2 tbpsn golden syrup (or honey)

Preheat the oven to gas mark 3/ 170 degrees celsius.

In a medium sized mixing bowl cream together the butter, brown sugar and caster sugar.

Beat in the eggs one at a time and then stir in the vanilla extract.

In a large mixing bowl add the flour and baking powder. Then stir in the creamed mixture.

Mix in the oats, choc chips and sultanas.Add the golden syrup and stir until everything is well combined.

Then drop the cookie mix onto a grease proof baking sheet. About 2 tbspns of mixture for each cookie should do it. I find that you can fit about 6 cookies on each tray so you may have to do these in batches.

Bake for 12 mins or until the edges are golden. Leave to cool.
